This is more of a suggestion rather that a strict recipe to follow. This is how most of my summer meals are made. A few carefully selected ingredients, delicately placed together, eaten quickly and without fuss. A recipe for the homemade ricotta is to follow shortly. In the mean time, your favourite store brought variety will do just fine.
2 ripe peaches
2 tablespoons of honey
1 small baguette
Sprinkle of cinnamon
Slice the baguette into 10 cm lengths and then carefully slice down the centre so you have two halves.
Pile on a generous serve of ricotta and top with a sprinkle of cinnamon.
Place onto a serving plate and decorate with some slices of peach. Finally drizzle over some honey and enjoy!
