Like most great salads this one was inspired out of necessity or rather an abundance of summer citrus and only a smattering of greens. Luckily all the flavours compliment each other so well. I’m usually not one to mix fruits into salads, it has always felt rather dated to me, however I think I am going to have to rethink such a belief as the combination has become rather addictive.
1 handful of rocket
1 handful mint leaves
1/2 a red onion
1 Lebanese cucumber
salt and pepper
a drizzzle of olive oil
a sprinkle of sesame seeds
Wash and sort through your salad greens and mint, wash and spin dry.
Carefully segment the orange over your serving bowl. The time it takes to segment the pieces away from the pith is worth it, if you do it enough times, you’ll soon get the hang of things.
Drop the pieces into the bowl, once finished squeeze the core and pith releasing the remaining juices into the bowl.
Thinly slice both the red onion and cucumber and place into the bowl, add the rocket and mint and give everything a gentle toss to combine.
Dust with salt and pepper and drizzle with a little olive oil. Give one final toss before sprinkling with sesame seeds.
